Jalapeno Poppers
8 oz. cream cheese
4 oz canned jalapenos (1/4 of jar=mild, 1/3 of jar=medium, 1/2 of jar hot, and anything else is smokin').
1/4 cup Parmesan cheese
20 wonton wrappers
vegetable oil for frying
In bowl, combine the cream cheese, jalapeno, and Parmesan cheese. Place wonton on flat surface. Dip fingers in water and moisten the edges of the wonton. Then put about a Tablespoon of mixture into wrapper. Fold wonton diagonally and seal with fingers. In a deep skillet heat oil until hot but not smoking. Fry the wontons about 30 seconds per side or until golden brown. Remove and place on a paper towel to drain oil. Serve immediately.

Corn Salsa
I absolutely love this salsa!!! I enjoy eating it with tortilla chips but other people eat it as a side dish or as a topping to chicken, etc.
1 can corn, drained,
1 can black beans, drained and rinsed,
5 medium tomatoes,
1/4 bunch cilantro leaves chopped,
3 green onions,
2 avocados diced,
2 limes squeezed over all
Salt and Pepper to taste

Guacamole
3 ripe avocados
3 Tbls. lime juice
1/2 large tomato, stemmed and finely chopped
1/2 large onion, peeled and finely chopped
2 cloves garlic, peeled and minced
1/2 jalapeno pepper, stemmed, seeded, and finely chopped
1/2 cup chopped fresh cilantro leaves
1 tsp. coarse salt, such as kosher salt
Freshly cracked pepper
Using a sharp knife, cut the avocados in half. Remove the pits. Scoop the flesh into a medium-sized bowl and roughly crush with a potato masher or fork. Stir in lime juice.
Chop the tomato as finely as possible. Scrape the tomato flesh and juice into the bowl with the avocados.
Add the onion, garlic, jalapeno pepper, cilantro, salt and pepper and stir to mix.
Press a sheet of plastic wrap on the surface of the guacamole. Let sit for about 1/2 hour at room temperature and then adjust the seasonings. You may want to add more jalapeno pepper, lime juice, salt or pepper. Serve at room temperature with tortilla chips for dipping.
A great recipe from my friend Tami.
