Market Sreet Grill Clam Chowder

Absolutely YUMMY
Ingredients:1 cup potatoes, diced ½ inch
1 cup celery, diced ½ inch
1 cup onion, diced ½ inch
1 cup green pepper, diced ½ inch
1 cup leeks, diced ½ inch
¾ cup chopped clams (canned or fresh)
¾ tablespoon coarse ground black pepper1 ½ tablespoon salt¾ tablespoon whole thyme6 bay leaves
1 teaspoon Tabasco
¾ cup sherry wine (optional)
2 cups water
¾ cup clam juice (drained from canned clams or purchased separately in can)
¾ cup butter, melted
1 cup flour
2 quarts half-and-half
Directions:Combine melted butter and flour in oven-proof container and bake at 325 degrees for 30 minutes. In large saucepan, combine remaining ingredients except half-and-half. Simmer until potatoes are thoroughly cooked. Stir butter-flour mixture into chowder and stir until thick. Mixture will be slightly less thick than cookie dough. Remove chowder from heat. Stir in half-and-half until blended. Heat to serving temperature, stirring occasionally.

Baked Potato Soup

Best ever Potato soup

Ingredients
4 medium potatoes (4 cups chopped) *more if you like extra chunk in your soup*
3 Tbsp. Butter
1 C. Diced onion
2 Tbsp. Flour
4 C. Chicken stock
2 C. Water
1/4 C. Cornstarch
1 ½ C. Instant mashed potatoes
1 tsp. Salt
3/4 tsp. Pepper
½ tsp. Basil
1/8 tsp. Thyme
1 C. Half & Half

Garnish, optional
½ C. Shredded cheddar cheese
1/4 C. Crumbled cooked bacon
2 green onions

Directions
Preheat oven to 400 degrees and bake the potatoes for 1 hour or until done. When potatoes have cooked, remove and let cool. *Tip* This can be done ahead to save time.

In a large pot melt butter and saute’ onions until light brown. Add the flour to the onions and stir to make a roux.

Add stock, water, cornstarch, mashed potato flakes, and spices to pot and bring to a boil. Reduce heat and simmer for 5 minutes.

Cut potatoes in half lengthwise and scoop out contents with a large spoon. Discard skins. Chop baked potatoes to make chunks about ½ inch in size.

Add potato and half & half to saucepan, bring soup back to a boil. Reduce heat and simmer soup for another 15 minutes or until desired thickness.

Serve with choice of garnish condiments.

Aztec Tortilla Soup

Here's one of my favorite soup recipes.

Aztec Tortilla Soup (Courtesy of my Aunt Marie)

3 TB EVOO
1/2 med onion chopped
1 clove garlic minced
45 oz chicken broth
1 medium butternut squash cubed in edible size
10 oz frozen corn

Toppings:
1 avocado cut-up, sunflower seeds, monterey jack or mozzarella cheese, tortilla chips.

In pot or oversized skillet, place EVOO. Add onion and garlic until soft. Add broth and squash. Bring to a boil;cover and simmer until squash is tender(15 minutes). Add corn and cook for 5 min more. Divide soup in bowls and add toppings. Yummy!

Karen's Minestrone Soup

Minestrone Soup
1# ground beef, leanest (I had some stew meat, I used)
1# Italian sweet sausage
1 chopped onion
garlic to taste
1 tsp Italian seasoning

2 large cans chicken broth
1 can red beans. drain
1 can white canelli beans...mash with a fork
1 can yellow corn
1 can chopped tomatoes, with jalapeno pepper in it (juice too)
1 small can tomato paste
1 lg package Italian Green Beans, frozen
1/2 package bow ties shaped pasta
I also use sauteed mushrooms...optional...
Brown and crumble the meat. Add chopped onion and mushrooms to skillet, along with garlic, italian seasoning
Put all that into a huge soup pot, start adding the canned stuff. Cook it for 20-30 mins. on simmer. Add the pasta
and Italian Green beans at the end. Let it set for half hour... If you have too little broth, add another can of chicken broth
If you don't like the spicy flavor, use chopped tomatoes, no peppers!

Black Bean Soup

This is so good and so easy. We just started a dinner group in our ward so if there are good recipes I'll pass them along.

1 cup jarred tomato salsa (plus extra for garnish)
2 15 1/2ounce cans black beans, drained and rinsed
2 cups chicken broth

Optional Toppings
sour cream
cheese
tortilla chips
lime

Heat the salsa in a large saucepan over medium heat, stirring frequently for about 5 min. Stir in beans and broth, then heat to boiling. Reduce heat to low, cover and simmer 15 min. Cool slightly then spoon half the soup in to a food processor or blender and puree. Return the pureed soup to the saucepan and heat through. Serve with sour cream, tortilla strips, salsa, and lime.

Serves 4

White Chicken Chili

I just tried this new recipe out tonight, very good, but very spicy (& I like spicy stuff)!!

Ingredients:

1 tablespoon vegetable oil
1 onion, chopped
2 cloves garlic, crushed
2 (4 ounce) cans chopped green chilies
2 teaspoons ground cumin
1 teaspoon dried oregano
1 teaspoon ground cayenne pepper
2 (14.5 ounce) cans chicken broth
3 cups chopped cooked chicken breast
3 (15 ounce) cans white beans
1 cup shredded Monterey Jack cheese

Directions:
1.Heat the oil in a large saucepan over medium-low heat. Slowly cook and stir the onion until tender. Mix in the garlic, jalapeno, green chile peppers, cumin, oregano and cayenne. Continue to cook and stir the mixture until tender, about 3 minutes. Mix in the chicken broth, chicken and white beans. Simmer 15 minutes, stirring occasionally.

2.Remove the mixture from heat. Slowly stir in the cheese until melted. Serve warm.
